I love making this leftover turkey soup recipe around the holiday season, especially if I have meat from Thanksgiving and I've gotten tired of making turkey sandwiches! With a classic medley of healthy veggies and a hearty broth, this is a soup season must-try.

- Cooked Turkey: This recipe is a fantastic way to use up any Thanksgiving turkey leftovers, or turkey breast can be cooked and sliced or shredded.

How to Make this Slow Cooker Turkey Noodle Soup
- Step 1: In a large slow cooker, combine chopped veggies, turkey broth or chicken broth, herbs, salt, and black pepper.
- Step 2: After the soup has cooked, remove the bay leaves and the stems from the thyme leaves. Stir in the noodles and turkey, then stir and cook.
Recipe Tips
- While this is a great way to utilize leftover Thanksgiving turkey, you could also go with classic chicken instead and buy a rotisserie chicken from your grocery store.
- For other veggie options, go with peas, spinach, bok choy, kale, cabbage, or even some lentils for additional nutrition.
- If you use vegetable broth instead of chicken or turkey, you may need to add some more seasonings to the soup.
- Allow leftovers to cool and store turkey noodle soup in an airtight container. It can be kept in the fridge for 3-4 days, or frozen for up to 3 months in a freezer-safe container. If you're freezing the soup, it's best to do it without the noodles and add freshly cooked noodles later on.
- Use poultry seasoning or even make your own homemade turkey stock to emphasize the turkey flavor.

Slow Cooker Turkey Noodle Soup

Ingredients
- 3 cups yukon potatoes diced
- 2 cups carrots diced
- 2 stalks celery diced
- 1 cup onion diced
- 3 cloves garlic minced
- 8 cups turkey or chicken stock
- 4 sprigs thyme
- 3 teaspoons herbes de Provence
- 2 bay leaves
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 cups cooked turkey diced
- 2 cups dried egg noodles
Instructions
- Add the potatoes, carrots, celery, onions, garlic, thyme, herbes de Provence, bay leaves, salt, pepper, and turkey stock into the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours.
- Remove the thyme stems and bay leaves. Add in the diced turkey and dried egg noodles, stir and cook another 15- 30 minutes or until the noodles are your preferred doneness.
- Serve!
Notes
- Rotisserie chicken can also be used in place of the turkey.
- To freeze: Place in an freezer-safe container and freeze for up to 3 months. I reccomend freezing without the noodles and adding cooked noodles right before serving.
