These turkey and cheese sandwiches are versatile and can be served for brunch, lunch, or a light dinner. They pair nicely with a variety of side dishes like Crispy Parmesan Onion RingsParmesan Roasted Broccoli, or some Cauliflower Gratin.

A turkey melt sandwich comes together quickly. You can have a delicious sandwich ready to go in under half an hour, making it ideal for busy families during the week! Plus, this sandwich recipe is a great way to use up leftover turkey you may have from any holiday meals.

Let's gather the Ingredients

All the ingredients needed for these sandwiches.
  • Large Croissants, or you could use smaller croissants if needed.
  • Cheese: Pepper jack cheese or choose your favorite.
  • Honey mustard: You can mix mustard with honey and make your own.
  • Sliced turkey: Ham, Chicken, or Pastrami would also work.
  • Butter: To brush on top of the rolls.
  • Seasonings: garlic powder and everything but the bagel seasoning

How to make turkey melts

Croissant rolls cut in half. Sandwiches built and baked.
  • Step 1: On a cutting board, using a sharp serrated knife or bread knife if you have one, cut your croissant rolls in half lengthwise.
  • Step 2: Spread honey mustard on each of the slices of bread before laying them on a baking sheet. Place a few turkey slices on the bottom half of each sandwich.
  • Step 3: Add cheese slices on top of the turkey slices.
  • Step 4: Place tops of croissants on the sandwiches. Use a pastry brush to brush the butter mixture over the tops of the sandwiches. Cover the sheet pan of sandwiches with a sheet of aluminum foil before putting it in the preheated oven to bake.

Recipe Tips

  • You can use leftover holiday turkey, a few slices of turkey breast from another recipe or use deli turkey.
  • If you want thicker slices of deli turkey, ask the grocery store employee at the deli counter to give you thicker slices than what they typically have in the display cases.
  • Serve sandwiches with a salad and soup for a complete meal.

What else can I add to this sandwich?

You could swap the Pepper Jack cheese out for American cheese, Monterey Jack cheese, or cheddar cheese. Add a slice or two of crisp bacon for a nice texture change. Adding some fresh veggies to the turkey and cheese melt
is another delicious option. A few tomato slices with some lettuce may be something you’re interested in, also.

Can I meal prep these sandwiches?

If you are looking to meal plan, then this delicious recipe
needs to be in your meal plan arsenal. You can make these turkey melt sandwiches up to 2-3 days in advance. I would recommend not making the butter mixture and brushing it on until ready to bake them; instead, assemble the sandwiches without the butter mixture on top and wrap them in plastic wrap or place them in an airtight container before storing them in the refrigerator. Store the butter mixture in a separate container until ready to bake the sandwiches. When you’re ready to bake them, melt the butter and seasoning mixture and brush it on the sandwiches before baking.
