All the ingredients needed for this recipe.
  • Potatoes: I prefer baby potatoes (these can be white potatoes or red potatoes- your preference), but Yukon golds or russet potatoes should work
  • Olive oil:
  • Herbs and spices: Paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper
  • Chicken: I prefer chicken breasts or chicken tenders that are cut into cubes
  • Garlic parmesan sauce: You can use my homemade version or store-bought sauce.
  • Broccoli: I prefer fresh broccoli but frozen works too.
  • Cheeses: Mozzarella cheese and grated parmesan cheese

How to Make Slow Cooker Garlic Parmesan Chicken and Potatoes

  • Step 1: Wash, prep, and cut the potatoes and place them in the slow cooker. Add olive oil, and herbs, and spices. Stir until well-coated. 
  • Step 2: Place diced raw chicken in a small bowl and pour garlic sauce on top of the chicken.

  • Step 3: Add coated chicken to the Crock Pot and toss everything together. Cook. 
  • Step 4: Once almost done cooking, add the broccoli and shredded cheese. Place the lid back on to help melt the cheese. I like to serve with extra sauce for dipping the broccoli, chicken, and even the potatoes in.

Easy Slow Cooker Recipe Tips

  • If you want cheese that melts easier and is even creamier, go for the mozzarella cheese blocks and shred it straight from the block. 
  • Always check the internal temperature of your chicken to ensure it's safe to eat. Use a meat thermometer for the best accuracy. 
  • When storing leftovers, sometimes I like to drizzle a little extra of the delicious sauce over everything so the next day when I enjoy it again it has a little bit more amazing flavor!

Can I use a different vegetable?

Of course, ditch the broccoli and try some cauliflower or green beans instead. 

Can I use dark meat, like skinless chicken thighs, instead? 

Yes, for this recipe, I liked skinless chicken breasts, but you can use boneless chicken thighs or other dark meat. The cook time
may change, so always check the internal temp of the chicken before consuming.

  • 1 ½ pounds baby potatoes
  • 1 tablespoons olive oil
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound chicken breasts or tenders cut into cubes
  • 1 cup garlic parmesan sauce my homemade version or store bought
  • 2 cups broccoli
  • 1 cup mozzarella cheese
  • ½ cup grated parmesan cheese

Instructions
 

  • Wash the potatoes and cut them in half.
  • Place in the slow cooker and add the olive oil, paprika, garlic powder, onion powder, Italian seasoning, salt, pepper and stir until coated.
  • In a small bowl add the chicken cubes and the garlic parmesan sauce and toss until coated. Place the coated chicken in the slow cooker and give it a toss.
  • Cook on low 6 hours or high 3 hours
  • The last 20 minutes add in the broccoli florets
  • The last 5 minutes sprinkle the shredded cheese on top, put the lid back on and let the cheese melt.
  • Serve with some extra sauce if desired.

Notes

You can make my Garlic Parmesan Sauce or purchase store bought.
I like to use baby potatoes but you can certainly use russet or Yukon gold potatoes diced into cubes.
Chicken thighs can be used instead of chicken breasts.
Green beans, or cauliflower can be used instead of broccoli.

    My husband and I loved this recipe. I found the chicken tenders became shredded with cooking the 6 hrs. I also added a whole jar of Garlic Parmesan Sauce and it turned out fine. Next time I’ll use boneless chicken breasts . What an easy delicious recipe . Thank you 😊
