This family favorite dinner is ready in only 30 minutes. Since it's a one skillet meal, that means there's less clean up at the end of the night- perfect for those busy weeknights.
Let's Gather the Ingredients
- Dairy: butter, heavy cream, and shredded cheese
- Smoked sausage: Keiblasa, chicken or even hot sausage will all work great.
- Veggies: diced onion, diced green pepper, undrained diced tomatoes, and a can of green chilies
- Seasonings: minced garlic, salt, and black pepper
- Chicken stock: Vegetable broth will also work.
- Rotini pasta: other shorter pasta options could be used, like penne pasta or rigatoni
How to Make This One-Pot Dinner
- Step 1: Add butter, sausage, onion, and diced green peppers to a large skillet and cook.
- Step 2: Add minced garlic to the skillet and cook until fragrant.
- Step 3: Pour in chicken stock, canned tomatoes, green chiles, and uncooked rotini pasta. Cover the skillet with a lid and cook until rotini pasta is tender.
- Step 4: Stir in heavy cream and shredded cheese until it melts. Garnish with parsley if desired, serve, and enjoy
Recipe Tips
- I used Colby Jack shredded cheese, but you can use other varieties of shredded cheese that you prefer, like parmesan cheese, cheddar cheese or fresh mozzarella cheese.
- Leftovers from this pasta skillet should be stored in an airtight container and can be kept in the fridge for up to 4 days.
- Any smoked sausage of your choice would work. Kielbasa, Italian grillers, or simple turkey sausage would all work in this pasta dish.
Recipe Faq's
This is an easily customized dinner recipe. Some other ideas to add are some sun-dried tomatoes. Green peppers can be traded out for orange, red, or yellow bell peppers. Other veggies like mushrooms, zucchini, squash, spinach, or kale would work.
Certainly. This whole recipe could be made and then stored in the fridge. Pull it out of the fridge and cook according to the directions. You may need to add a couple extra minutes to the cooking time.

One Pot Sausage Pasta Skillet

- 2 tablespoons butter
- 1 pound smoked sausage cut into slices
- 1 cups diced onion
- ½ cup diced green pepper
- 2 cloves garlic minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 cups chicken stock
- 1 14.5 ounce can diced tomatoes undrained
- 1 4 ounce can of green chilis
- 2 ½ cups uncooked rotini pasta
- 1 cup heavy cream
- 2 cups shredded cheese I used colby jack
Instructions
- Heat a 12 inch skillet on medium high heat add the butter, sausage, onion and green peppers and cook 5-6 minutes.
- Add garlic and cook about 30 seconds just until fragrant.
- Add in the chicken stock, canned tomatoes, green chilis and pasta. Bring to a boil and cook uncovered 15-18 minutes or until pasta is tender.
- Reduce heat and stir in the heavy cream and shredded cheese until melted.
- Garnish with fresh parsley if desired and serve!

I made this tonight for dinner. I actually cut the recipe in half because there’s only two of us. It was so easy and it was really good so this is definitely a keeper for me.
