- Olive oil: Avocado oil will also work
- Red wine vinegar: You can use apple cider vinegar in a pinch.
- Lemon juice: I prefer fresh lemon juice over the bottled stuff as the fake stuff can taste kind of chemically.
- Dijon Mustard
- Honey: Maple syrup can be used in place of honey.
- Herbs and spices: Italian seasoning, red pepper flakes, salt, black pepper, and fresh chopped parsley.
- Fresh veggies: diced cucumbers, diced tomatoes, diced red onion.
- Garbanzo beans: Also called chickpeas
- Feta cheese: Goat cheese would also work.
How To Make Orzo Pasta Salad
- Step 1: In a small bowl, whisk the dressing ingredients together until well combined.
- Step 2: Cook orzo according to the package instructions and rinse with cold water. In a large bowl, add the cooked orzo with the homemade dressing and stir to coat.
- Step 3: Add fresh vegetables and beans to the orzo and mix.
- Step 4: Add in fresh herbs and cheese before mixing again. Chill in the fridge.

- If you added some cooked chicken, shrimp, or even steak to this salad, it could become a main dish. Even without added protein, this could be a great main course.

Chickpea Orzo Salad
Ingredients
- 8 ounces dried orzo pasta
For The Dressing
- 6 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 2 teaspoons Dijon Mustard
- 2 tablespoons honey
- 1 teaspoon Italian seasoning
- Pinch of red pepper flakes
- Salt and pepper to taste
For The Salad
- 1 ยฝ cups cucumbers diced
- 1 ยฝ cups tomatoes diced
- 1-15 ounce can garbanzo beans drained
- ยผ cup red onion diced
- 1 cup feta cheese
- ยผ cup fresh chopped parsley
Instructions
- Cook orzo pasta according to the package directions, then place in a colander and rinse with cold water.
- In a small bowl whisk together the dressing ingredients until combined.
- Add the cooled orzo to a large mixing bowl and add the dressing in and toss until coated.
- Add in the cucumbers, tomatoes, garbanzo beans, red onion, feta cheese and parsley and mix. Place in the refrigerator for 1 hour then serve.
