Ingredients Needed

- Chicken Tenders: Chicken breasts will also work here or even rotisserie chicken for a shortcut.
- Cooked Bacon: I like to use a thick-cut smoky bacon.
- Avocado: Great for its creamy texture and slightly buttery flavor.
- Parmesan Cheese: Shaved or grated parmesan cheese.
- Homemade Caesar Dressing: For the dressing, you'll need mayo, garlic, anchovy paste, lemon juice, Dijon mustard, Worcestershire sauce, Parmesan, salt and black pepper, and oil.
How to Make this Grilled Chicken Caesar Salad

- Step 1: Combine all of the dressing ingredients in a large bowl, then set aside.
- Step 2: Rub chicken with oil and season with salt and pepper. Grill over medium-high heat for 5 minutes on each side, then rest 5 minutes and slice. Assemble salad and enjoy!

Recipe Tips
- I recommend serving this salad fresh, but you can prepare the dressing, grill the chicken, hard-boil the eggs, and cook the bacon ahead of time. Store them separately in the fridge until it's time to assemble the salad.
- Don’t overdress the salad — start with a small amount of dressing and toss as needed.
- Slice the chicken against the grain for the most tender bites.
- A meat thermometer is the easiest way to avoid overcooking the chicken. Cook until it reaches 165°F.

Recipe FAQ's
The main difference between a Cobb salad and a Caesar salad comes down to the toppings and dressing. A classic Caesar salad is typically made with crisp romaine lettuce, creamy Caesar dressing, Parmesan cheese, and croutons, sometimes topped with grilled chicken. A Cobb salad, on the other hand, is loaded with hearty toppings like chicken, bacon, avocado, boiled eggs, tomatoes, and cheese. This Grilled Chicken Avocado Caesar Salad combines the best of both worlds with the creamy Caesar flavors you love along with the hearty toppings commonly found in a classic Cobb salad.
Homemade Caesar dressing gives this salad the best fresh flavor, but store-bought works great for a quick shortcut.
Make sure the lettuce is chopped or torn into bite-sized pieces. It can also help to soak the lettuce in cold water, then carefully pat it dry.
I use chicken tenders, but if you can't find these, you can buy some chicken breasts and slice them into smaller pieces before or after grilling.

The nutritional info is based on the croutons being added. 🙁
How many carbs if you skip the croutons?
Yes that is part of the salad dressing. 🙂
I am making the dressing now..at the end of dressing ingredients there is a space and then it says 1/4 c olive oil...is the oil part of the salad dressings?
