How to Make this Chessman Cookie Banana Pudding

- Step 1: In a medium bowl, use an electric hand mixer to combine the evaporated milk with instant pudding.
- Step 2: Add the sweetened condensed milk and mix well, then cover and refrigerate.

- Step 3: In a separate bowl, beat the cream cheese until smooth.
- Step 4: Mix in vanilla and powdered sugar.

- Step 5: Fold the refrigerated pudding mixture into the cream cheese mixture until smooth.
- Step 6: Add a layer of cookies to the bottom of a 9x13 baking dish, and then add a layer of bananas.

- Step 7: Add about half of the filling mixture, another layer of bananas, and the rest of the filling.
- Step 8: Top with another cookie layer, then refrigerate at least 6 hours (but overnight works best).

- You'll need about 2.5 packages of cookies, so I recommend buying 3.
- You'll want your bananas on the ripe side but not too brown. Overripe bananas won't hold their shape in the pudding and will give you a mushy, liquid result.
- This is a dessert that benefits from some extra time to sit in the fridge, so resist the urge to enjoy right away and give the pudding mixture time to set!
- Allow the cream cheese to come up to room temperature to make it easier to beat.

Yes, and in fact I actually recommend it! Banana pudding needs at least 6 hours to set properly, but making it a day or two ahead is even better.
Technically, you can freeze it for up to a month, but the bananas and cookies might become a bit mushy once they thaw. I recommend fridge storage.
Store your banana pudding in the fridge, covered well with plastic. For best results, press the plastic right to the top of the banana pudding and against any exposed edges. It should last for 4 days or so.

Ingredients
- 1 ( 5.1 ounce) box instant French vanilla pudding mix not cook and serve
- 1 (12 ounce) can evaporated milk chilled
- 1 (14 ounce) can sweetened condensed milk
- 1 (8 ounce) pkg cream cheese softened
- 1 teaspoon vanilla extract
- 1/2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 8 large ripe bananas cut into 1/2 in slices
- 3 (7.25 ounce) Chessman Butter Cookies

Instructions
- In a medium bowl using a hand mixer, mix together the pudding and evaporated milk for about 2 minutes or until thickened.
- Add in the sweetened condensed milk and beat until smooth, cover, and refrigerate until ready to use.
- In another medium bowl mix the softened cream cheese until smooth.
- Add in the powdered sugar and vanilla extract and beat until creamy.
- Remove the chilled pudding mixture from the refrigerator and fold the cream cheese mixture in until combined.
- Add a layer of Chessman cookies into the bottom of a 9x13 baking dish (should be about 28 cookies) followed by a layer of bananas.
- Spread half of the pudding mixture over the top of the bananas. Repeat with another layer of bananas, then spread on the remaining pudding mixture, followed by the final layer of Chessman cookies.
- Chill for at least 6 hours or overnight. Serve!
Notes
- This dessert needs at least 6 hours to set, even better overnight.
- You will need about 2 1/2 pkgs of Chessman cookies.
- Use ripe (but not overly soft) bananas you want bananas that are sweet but still hold their shape. Overripe bananas can turn mushy and make the layers too soft.
- Chessman cookies are classic, but vanilla wafers or shortbread cookies work in a pinch.
