This Bacon Egg and Cheese Biscuit Sandwich is my go-to freezer-friendly breakfast. Fluffy scrambled eggs, crispy bacon, andmelty cheese tucked into a warm, buttery biscuit — just as good grabbed on the way out the door as it is fresh off the stove. Like my Easy Breakfast Quesadillas, it's perfect for meal-prepping a batch to keep on hand all week.

Made with my homemade buttermilk biscuits (store-bought works in a pinch), it comes together with simple ingredients you already have on hand. Freeze a batch for busy weekdays or serve fresh for a lazy Sunday brunch — either way, this bacon
egg and cheese biscuit sandwich is a hit. Pair it with fresh fruit or my Apple Pie Cinnamon Rolls for a full spread.

Ingredients Needed

- Biscuits: My homemade buttermilk biscuits are perfect for this recipe, but Pillsbury™ Grands biscuits work in a pinch.
- Eggs: Scrambled is my preferred method, but a fried egg is also delicious.
- Bacon: I love a good applewood smoked bacon, but turkey bacon or Canadian bacon both work well.
- Cheese: I prefer American cheese, but pepper jack or cheddar would be delicious too.
- Chives: Green onions work here as well.

How To Freeze Breakfast Sandwiches

- Step 5- Slice the biscuit and place a layer of scrambled eggs on top.
- Step 6-Place your favorite cheese on top with the cooked bacon.
- Step 7-Add the top biscuit.
- Step 8-Wrap the biscuits in foil and place them in a Ziploc freezer bag to freeze.

Recipe Tips
- If you'd rather fry your bacon in a skillet, go for it — either method works great.
- Be careful not to overcook the eggs, or they can turn out dry.
- Swap in a fried egg instead of scrambled for a change of pace.
- Try a slice of Jimmy Dean sausage or my Country Breakfast Sausage instead of bacon.

Recipe Faq's
Yes! Prep the biscuits up to two days in advance and store them in an airtight container in the fridge. Cook the bacon and eggs the day before, then assemble the sandwiches the next morning and warm them in the microwave or oven.
Wrap each assembled sandwich in plastic wrap or wax paper, then in aluminum foil, and place in a large Ziploc freezer bag. They'll keep in the freezer for up to 3 months.
Heating instructions: remove foil, wrap in a paper towel and place on a microwave-safe plate, and heat on high for 2 minutes or until heated through.
