Not only is this Doritos Casserole super easy to make and insanely delicious, but both kids and adults love it. It will quickly disappear from the dinner table because the whole family will be asking for seconds. I can't seem to get enough of this casserole or my Loaded Taco Dip.
Why This Hearty Casserole Works
Casseroles are hearty dinner options made of comfort food. My Ultimate Chicken Casserole is another dish that always gets demolished like this ground beef one. You know everyone is going to bed with a full, warm belly.
This dinner is easily customizable which means it is just what you need to make if you have picky eaters. You can use more or less of certain ingredients, omit ones you don't like, and feel free to add some other favorite taco toppings if I didn't mention something you'd enjoy with this recipe. This delicious dinner is the perfect thing to whip up on Taco Tuesday when you want a slight change from the typical tacos.
Ingredients Needed

- Ground beef: lean ground beef is a better option so excess grease doesn't make this casserole too soggy. You can also use ground chicken or turkey.
- Veggies: diced onion, diced tomatoes, corn, sliced green onions, and diced black olives
- Taco Seasoning: a packet from the store or make Homemade Taco Seasoning
- Sour cream: Plain Greek yogurt will also work.
- Shredded cheese: I used a combination of cheddar cheese and pepperjack cheese. Shred your own instead of using the bagged kind.
- Black beans: Pinto bean or kidney beans will also work.
- Doritos: I used Nacho Cheese, but any flavor of Doritos will work. This would be delicious with Cool Ranch Doritos too.
- Salsa: I like to use a thick salsa so the casserole isn't too watery.
How to make Dorito Casserole

- Step 1: Heat a large skillet and add ground beef. Cook for a few minutes, breaking the meat up with a meat chopper or wooden spatula as it cooks. Drain grease and add diced onion. Cook a bit longer.
- Step 2: Add taco seasoning to the onion and meat mixture and mix together before briefly cooking.
- Step 3: Pour black beans, salsa, and corn into the skillet and mix to combine.
- Step 4: Turn off the heat and stir in the sour cream.

- Step 5: Add a third of the crunchy Doritos to the bottom of the casserole dish and spread them out.
- Step 6: Add half of the ground beef mixture over top of the chips and spread it out. Top with a third of the cheese and spread it over the meat mixture.
- Step 7: Add another layer of Doritos, then the rest of the meat mixture, and another third of the cheese. Top with the last of the chips and cheese.
- Step 8: Cover with foil and bake in a preheated oven, removing the foil halfway through so the cheese can melt. Remove from the oven, add toppings and serve with sour cream, salsa, and guac.

Recipe Tips
- Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Chips will get less crispy over time. Reheat leftovers in the oven in a covered baking dish. You could use the microwave to reheat a serving of this easy casserole but the Doritos may not stay crispy.
- This can be made with ground pork, ground chicken or ground turkey instead of ground beef.
- Try adding other layers of things to the baking dish, like refried beans, pinto beans, diced and cooked bell peppers, rotel tomatoes, or shredded lettuce.
- Toppings to add to this Mexican casserole can vary depending on your preferences. Some ideas are diced tomatoes, olives, sliced jalapenos, green onions, and fresh cilantro.
- Serve this with a side salad or some Mexican Rice.

Recipe Faq's
Any cheese that you would enjoy with the other ingredients should work. Try a Mexican blend, mozzarella, Monterey Jack, or cheddar cheese.
You want the chips to be about a half-inch in size. If they're too small they'll soak up moisture from the other ingredients and can become mushy. If you leave them full size, they can make serving this cheesy ground beef casserole harder.
Yes you can make it up to 6 hours before you want to serve it. You can also make it a day ahead of time but I recommend making the meat mixture and assembled it all right before baking.

Dorito Casserole
Ingredients
- 1 pound ground beef
- ½ cup onion diced
- 1 packet taco seasoning or 3 tablespoons of my homemade
- 1 ½ cups thick salsa
- 1 cup sour cream
- 1 cup corn
- 1/2 cup black beans
- 2 cups shredded cheese
- 4 cups crushed Doritos I used nacho cheese
- ½ cup tomatoes diced
- ½ cup black olives diced
- ¼ cup green onions sliced
Instructions
- Preheat the oven to 375 degrees and spray a 9x13 baking dish with cooking spray.
- Heat a large skillet on medium high heat and add the ground beef, cook 4-5 minutes breaking up the meat with a spatula or meat chopper, drain any extra fat and add in the diced onion and cook another 3-4 minutes.
- Stir in the taco seasoning and cook another minute.
- Add in the salsa, black beans and corn and mix until combined.
- Turn off the heat and mix in the sour cream until combined.
- Spread 1/3 of the Doritos into the bottom of the baking dish followed by ½ of the meat mixture and 1/3 of the cheese.
- Repeat the process with 1/3 of the Doritos the remaining meat mixture and 1/3 of the cheese. Then add the remaining chips on top and the final layer of cheese.
- Cover with aluminum foil and bake for 30 minutes, remove the foil and bake another 15 minutes or until cheese is melted.
- Remove from the oven and top with diced tomatoes, olives, green onions,
- Serve with sour cream, salsa and guacamole!
