A sheet pan dinner is one of my favorite ways to make a satisfying meal that requires very little stress and prep. This chicken with potatoes and green beans recipe has been one of my favorite sheet pan meals lately.

Juicy BBQ chicken paired with tender crisp green beans and potatoes is a classic and crowd-pleasing dish. With the veggies baked right alongside the chicken, you'll have everything you need for a full dinner on one sheet pan!

  • Seasonings: A blend of smoked paprika, onion powder, garlic powder, chili powder, red pepper flakes, and cumin give your chicken so much flavor.

How to Make Baked Chicken Potatoes and Green Beans

Steps 1 through 4 for making bbq baked chicken potatoes and green beans.
  • Step 1: Combine all of the seasonings in a small mixing bowl. In a large bowl, toss chicken thighs with olive oil and the coat in seasoning blend.
  • Step 2: In a separate bowl, toss the potatoes and green beans with olive oil and onion soup dry mix.
  • Step 3: Arrange the chicken thighs on one half of a baking sheet and add the potatoes to the other half. Bake!
  • Step 4: Remove from the oven. Mix the green beans with the potatoes. Coat the chicken thighs in BBQ sauce, then back into the oven!

Recipe Tips

  • Boneless skinless chicken breasts can also be used, but be aware that you'll need to reduce the cooking time a bit. You may even want to bake the potatoes on their own for a bit before cooking the chicken to ensure that the potatoes are tender.
  • Instead of baby potatoes, red potatoes, gold potatoes, russet potatoes, or fingerling potatoes can be used. For larger potatoes, cut into bite sized pieces first.
  • Cover the cookie sheet with parchment paper or aluminum foil for easier cleanup.
  • If you want to add other veggies, try brussels sprouts, broccoli, baby carrots, or even entire garlic cloves for a punch of flavor.
  • I much prefer to use fresh over frozen green beans, but if you want to use frozen be sure to fully thaw and drain them of excess liquid.
  • If you have leftovers of your sheet pan chicken, transfer to an airtight container and store in the fridge for 3 to 4 days.

Can you cook raw chicken and potatoes together?

Yes, as long as you cook the chicken all the way through, there's no harm in cooking them together on the same baking sheet.

How do you know when chicken is done cooking?

Use a meat thermometer or other instant-read thermometer to check for an internal temperature of at least 165 degrees F.

Ingredients
  

  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon cumin
  • 6 boneless skinless chicken thighs about 2 lbs
  • 4 tablespoons olive oil divided
  • ½ pounds baby potatoes cut in half or quartered if they are large
  • 1 packet French onion soup mix
  • 1 cup BBQ sauce
  • 3 cups fresh green beans trimmed

Instructions
 

  • Preheat the oven to 425 degrees and line a baking sheet with aluminum foil for easy clean up.
  • In a small bowl, mix together the brown sugar, paprika, garlic powder, onion powder, chili powder, salt & pepper, red pepper flakes, and cumin and mix until combined.
  • Place the chicken thighs in a large bowl and add 1 tablespoon olive oil followed by the spice mixture and toss until coated. Place the chicken thighs on one half of the baking sheet.
  • In a medium bowl add the potatoes followed by the remaining olive oil along with the French onion soup mix and toss until coated. Spread the potatoes on the other half of the baking sheet.
  • Bake for 20 minutes, then place the green beans on the potatoes and give them a gentle stir. Spread the BBQ sauce over the chicken thighs. Bake another 15-20 minutes or until the internal temperature reaches 165 degrees. Serve!

Notes

  • Chicken breasts can be used, but you will have to adjust the time a bit as they cook much faster. You might want to cook the potatoes for 20 minutes first then add the chicken breasts if they are thin.
  • Store leftovers in an airtight container in the refrigerator for 3-4 days.
