Banana Blueberry Cream Cheese Bread

Ingredients
  

  • 3/4 cup butter softened
  • 1- 8 oz. pkg. cream cheese softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla extract
  • 2 cups mashed bananas
  • 1 3/4 cups fresh blueberries

Instructions
 

  • Preheat oven to 350
  • Beat butter and cream cheese at medium speed with an electric mixer until creamy. Gradually add sugar, beating until light and fluffy. Add eggs, one at a time, beating just until blended.
  • Combine flour and next 3 ingredients; gradually add to the wet mixture, beating at low speed just until blended. Add in bananas, and vanilla just until mixed. Then with a spatula gently fold in blueberries. Spray two 8x4 loaf pans and spoon in the batter.
  • Bake for 1 hour or until a long wooden pick inserted in center comes out clean . Cool bread in pans on wire racks for 10 minutes.

Notes

You can use frozen blueberries, no need to thaw them first. And toss them with 1 tablespoon of all-purpose flour before adding them to the batter.
To Freeze-Cool the loaf completely and wrap it in plastic wrap then a sheet of aluminum foil. Freeze for up to 3 months.

  1. I have not tried this with any sugar alternatives you could cut the sugar back it just won't taste as sweet.

  2. I am trying to cut added sugar out of mine and my husband's diet. Do you have any suggestion on making this with less sugar? I have used this recipe several times and we really love it but I am not good at recipe conversion. TY in advance whether or not you can help.

  3. Not with this recipe or it would be in the recipe card. You can add a glaze by mixing confectioners sugar and a little milk and drizzle over the top.

  4. Yes, you'll just have to adjust the baking time and it's done when a wooden pick or knife comes out clean.
