Halloween Bacon Jalapeño Popper Mummies

Jalapeño Popper Mummies are the Halloween appetizer that looks like it took an afternoon and takes one bowl and a can of crescent rolls. Each jalapeño half gets the classic popper filling — cream cheese, pepper jack, and smoky bacon — then strips of dough are wrapped around it like bandages, with a gap left for the candy eyes. If you already make my Bacon Jalapeno Cheese Ball, this is the same flavor in a shape people will photograph.

One batch makes sixteen, which is the right number for a party tray, and they come out of the oven in under fifteen minutes. Set them out next to Frankenstein Rice Krispie Treats and Chipotle Bacon Deviled Eggs and the whole table matches.

Why You'll Love This Recipe
Six Ingredients, and One of Them Is Candy Eyes. Cream cheese, pepper jack, bacon, jalapeños and a can of crescent rolls. Nothing here needs a special trip.
They Look Harder Than They Are. The strips of dough do all the decorating for you — wrap, bake, add eyes. There's no piping and no assembly line.
One Batch Feeds a Party. Sixteen out of a single tray, and they're finger food, so there are no plates and no forks to put out.
If you're building a whole spread, my Halloween Boo Bark and Spider Oreo Cookie Pops round it out on the sweet and savory sides.
Ingredients Needed

- Jalapeños: Go for the large ones. Bigger halves hold more filling and give you more surface to wrap, which makes the mummy effect read better.
- Refrigerated crescent roll dough: A full sheet or triangles is fine. You're cutting it into strips, not using the triangles as they come.
- Bacon: I like to use smoky bacon.
- Cheese: Use cheddar or Jack cheese, if you prefer.
How To Make Jalapeño Popper Mummies

- Step 1: Stir the cream cheese, pepper jack and bacon together until combined.
- Step 2: Slice the jalapeños in half lengthwise and scrape out the seeds and cores.

- Step 3: Pinch two crescent triangles together into a rectangle, then cut it into thin strips.
- Step 4: Spoon the filling into each jalapeño half.

- Step 5: Wrap two or three strips around each stuffed jalapeño, leaving a gap for the eyes. Brush the egg wash over the dough.
- Step 6: Bake until the dough is golden; let cool for 10 minutes, then press the candy eyes into the filling.

Recipe Tips
- Wear gloves to seed the jalapeños. Capsaicin stays on your hands long after you've washed them, and it will find your eyes later.
- Cut the dough strips thin. Thick strips puff up in the oven and swallow the gap you left for the eyes, so you lose the mummy look.
- Leave the eye gap before baking, not after. The dough spreads as it cooks; a gap you meant to make later won't be there.
- Let them cool the full ten minutes before the eyes go on. Warm poppers soften the candy, and it slides.
- Keep the peppers a similar size. Mixed sizes mean some are done while others still have raw dough underneath.

Recipe FAQ's
The filling is the same — cream cheese, pepper jack and bacon. The difference is the wrap: instead of breadcrumbs or a bacon slice, thin strips of crescent dough go around each one like bandages, with candy eyes in the gap.
Yes. The recipe calls for cooked, crumbled bacon. Raw bacon won't render inside the filling in fourteen minutes, so it stays soft and fatty.
Moderate. Seeding and coring the jalapeños takes most of the heat out, and the cream cheese tempers what's left — but the pepper jack adds some back.
The baking aisle, next to the sprinkles, usually from late September through Halloween. Craft stores with a baking section carry them year-round.
Yes, prep them then and place them into the fridge on a baking sheet covered with foil. Bring them to room temperature for about 15 minutes before baking.

Yes they should be fine just make sure you cover them in an airtight container. Or you could prepare them and wrap them in the dough right before baking.
Can you make these the night before with them wrapped in dough?
There is a link in the post and in the notes section of the recipe card 🙂
Where do you get eye candy?
If using large jalapenos they still have a little firmness. Just test one with a fork and see if you want more cooking time and add 1-2 minutes until the desired softness.
Will the jalapeño come out soft or crunchy?
I would prep and assemble them and bake them at the party. If you can't do that they should travel fine, but you'll want to keep them warm.
I want to make these ahead of time for a party. Will they travel well and still be tasty?
This appetizer is best served right out of the oven. You could make the filling etc and have everything separate then assemble and bake. Hope this helps Lauren 🙂
How are these refrigerated? I want to make for my work party tomorrow but will need to make tonight and refrigerate.
