Fried Potatoes with Sausage is an easy one pot dish that has the perfect combination of flavors from the smoked sausage to the tender potatoes and seasonings. The best part is it comes together in just 30 minutes.

Why This Recipe Works

One pot recipes are always raved about by the whole family for a variety of reasons. Personally, I love the decrease in dishes to clean up like my One Pan Chicken and Potatoes.

These perfectly fried potatoes and bite sized pieces of sausage make a versatile dish. You can serve them with breakfast, lunch, or dinner. 

Plus, you only need a handful of ingredients and they're pretty budget friendly and would go great with my Oven Fried Chicken or my Oven Baked Ribs!

Ingredients Needed

All the ingredients needed for this recipe.
  • Cooking oil:  olive oil or vegetable oil
  • Smoked sausage: This could be swapped for turkey sausage, chicken sausage, or other sausage of choice. If you like heat, opt for some spicy Italian sausage. 
  • Vegetables: chopped large onion and diced russet potatoes. These are simple enough to swap out for other options like Yukon gold potatoes, red potatoes, or even diced sweet potatoes. You can use whatever chopped onions you prefer- white onion, yellow onion or red onion are options. Any choice is a great addition.
  • Herbs and spices: minced garlic cloves, black pepper, salt. These are basic, but others may be added and quantities should be adjusted according to your taste. 
  • Water

How to Make Fried Potatoes with Sausage

  • Step 1: Prep Italian sausage by cutting it into small pieces and heat some cooking oil in a large skillet. Add cut-up sausage to the skillet with the onions and garlic. Saute it all together until browned, then transfer to a plate and set aside.
  • Step 2: Add the rest of the cooking oil, and diced potatoes with your salt and black pepper to the skillet and cook, stirring occasionally.

  • Step 3: Next, add the water to the potatoes, reduce the heat, cover with the skillet lid, and cook, tossing halfway through.
  • Step 4: Take the lid off, increase the heat and cook a bit more before adding the cooked sausage and onions back to the skillet. Toss it all together and enjoy,

Recipe Tips

  • Peeling the potatoes is not necessary unless that's your preference. If you're just looking for an easy meal, leave the skins on. 
  • To really give this sausage and potatoes recipe even more of a Southern feel, swap the olive oil out for some full-fat butter, bacon drippings, lard, or beef tallow as your cooking liquid. 
  • Fancy it up by adding things like green beans, diced green peppers, diced red peppers, or other bell peppers, additional potatoes, or other favorite vegetables to really make it a hearty recipe.
  • I find it easiest to fry potatoes in a single layer so I know they all cook evenly.
  • A cast iron skillet is not required, a regular frying pan works fine.

Can I use frozen potatoes?

Be sure to thaw them first and cook using theย easy steps in the recipe to make thisย delicious meal even easier!

Is this spicy?

No, thisย skillet sausage and potatoes isn't spicy. But you can make it if you desire. Try adding someย red pepper flakes or hot sauce to bring some heat.ย 

Should you boil potatoes before frying?

No need to boil or cook your diced potatoes before frying them. Pan-frying these potatoes gives the perfect texture, especially when making theย delicious dish the way I did.ย 

How to store and reheat

Leftovers of thisย easy recipe should be stored in anย airtight container
ย and should be kept in the fridge for up to 4 days. You can freeze leftovers in a freezer-safe container or freezer bag with excess air removed for up to 3 months.ย Reheat in the microwave or stovetop until heated through.

Ingredients
  

  • 3 tablespoons olive oil divided
  • 1 pound smoked sausage
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 ยฝ pounds russet potatoes diced
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • ยฝ cup water

Instructions
 

  • Cut sausage into bit sized pieces. Heat a 12 inch skillet on medium high heat and add 1 tablespoon olive oil and add the sausages, chopped onions and garlic. Saute until browned about 3-4 minutes then remove to a plate and set aside.
  • Add the remaining olive oil and add the diced potatoes salt and pepper and cook 5 minutes stirring occasionally.
  • Add in the water reduce heat to medium low and cover the skillet, cook 10 minutes. Give the potatoes a toss about half way through.
  • Remove the lid and turn the heat back up to medium high cook another 10 minutes or until potatoes are fork tender. Add the sausage and onions back in and toss.
  • Serve as a side dish to your favorite protein or eggs!

Notes

You can use Yukon Gold potatoes if you prefer. I donโ€™t peel the potatoes but you certainly can.
Any precooked sausage will work like kielbasa, andouille, smoked sausage, or hot links.

  1. In the directions, you have us adding the onion & garlic while sautรฉing the sausage, but the video shows you adding the onion & garlic to the potatoes after you removed the sausage. I think Iโ€™ll do the latter (vs the written instructions), since the sausage has amazing flavors & it wouldnโ€™t hurt to enhance the potatoes w/the onion. ๐Ÿคทโ€โ™€๏ธ

  2. A good healthy add in is fairly fine chopped kale, with or without a bit of shredded carrot.
