Ingredients needed for this apple quick bread
Ingredient notes
- Sugars: Both granulated sugar and brown sugar are in this recipe.
- Butter: I use unsalted butter for baking.
- Apples: I like to use tart apples like Granny Smith or Honeycrisp.
- Flour: All-purpose flour is recommended.
- Milk: Whole milk or lowfat will work fine.
- Walnuts: Pecan also work great but if you prefer to leave them out you can.
How to make this apple fritter loaf
- Step 1: In a small bowl mix the brown sugar and cinnamon until combined and set aside.
- Step 2: In a medium bowl using a hand mixer, mix the sugar and butter until combined then add eggs, milk, and vanilla and mix.
- Step 3: Mix in the eggs and vanilla to the butter mixture.
- Step 4: Add in the dry ingredients and mix.
- Step 5: Mix in the milk
- Step 6: Pour half of the batter into a prepared loaf pan.
- Step 7: Sprinkle half of the cinnamon sugar mixture on top.
- Step 8: Add the diced apple layer on top.
- Step 9: Followed by the remaining batter.
- Step 10: Then add the remaining diced fresh apples, cinnamon mixture, and walnuts and bake! Let cool and drizzle the glaze on top of the bread.
Recipe Tips
- Be sure to spray the loaf pan well or use a piece of parchment paper.
- make sure the loaf is fully cooled before adding the glaze.

- Your baking time can vary depending on the type of apple you use.
- If your loaf starts to brown too quickly place a piece of aluminum foil on top to protect it.

Yes this easy apple fritter bread freezes wonderfully. Let it cool completely wrap with plastic wrap and place in a ziplock freezer bag and freeze for up to 3 months. Thaw in the refrigerator then when ready to serve drizzle the glaze over the top.
Your baking time can vary slightly depending on the apples and how much water they have. Make sure you put it in the center of the oven and tent it with aluminium foil if its starting to brown to quickly on top. The apple fritter quick bread recipe is done when a toothpick inserted into the center of the loaf comes out clean.
You can store this airtight at room temperature for up to 3 days. Stored airtight in the refrigerator it will be good for up to 5 days.
Apple-Walnut Fritter Bread
Ingredients
- 1/2 cup brown sugar
- 2 teaspoon cinnamon
- 1/2 cup unsalted butter softened
- 2/3 cup sugar
- 2 eggs
- 1/2 cup milk
- 1 teaspoon vanilla
- 1 1/2 cups all-purpose flour
- 1 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 2 Granny Smith Apples peeled and diced
- 1/4 cup chopped walnuts
Glaze
- 1/2 cup powdered sugar
- 2-3 teaspoons milk
Instructions
- Preheat oven to 350 degrees. Spray a 9x5 loaf pan with non-stick spray. Place a rectangle piece of parchment paper in the loaf pan that hangs over the sides.
- Mix brown sugar and cinnamon together in a small bowl and set aside.
- In a medium bowl beat butter and sugar until smooth. Add eggs one at a time just until blended, add vanilla.
- In another bowl whisk flour, salt, and baking powder together, then add to wet mixture and whisk just until blended. Whisk in milk just until smooth.
- Pour half the mixture into the loaf pan. Add half of the brown sugar mixture then half of the apples, gently pat into the batter.
- Add the rest of the batter into the loaf pan spreading gently with a spatula, followed by the remaining apples, walnuts, and remaining brown sugar mixture. Lightly pat.
- Place the loaf in the center of the oven and bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.
- Let cool for 15-20 minutes on a baking rack. Use the parchment paper to pull the loaf right out, drizzle with glaze.
For the Glaze
- Whisk powdered sugar and milk together in a small bowl until combined.

This is a most do RECIPE for my family. My grandson is a very very picky eater. The first time I made it was for his Aunt's birthday back in late August and he LOVED it, he has been asking me to make again, so today on THANKSGIVING i"am making it for him and the family.

It is delicious! I will make it again but this time I will bake it for longer. My oven is really powerful one and I usually reduce temperature by 5 degrees. Since I tried it for the first time I followed instructions completely inclusive of exact size of the loaf tin and oven temperature. After 45/50 mins my cake still was raw in the middle. I baked it for one hour in total but it still was a little bit soggy in the middle. Another 5 or 10 mins would have finished it of beautifully! Next time! Otherwise it is very simple and tasty!!

This was very moist but I would call it a cake made in a loaf pan, not bread. I would have liked it to be sweeter but that's just me. Be sure to mix Brown sugar & cinnamon really well. I got a few bites that had too much cinnamon but I think that read my fault.

I made 2 versions of this one just as instructed the other with one banana mashed and blended into the wet ingredients. Both tested amazing however I noticed the loaf I made just as the recipe stated was a little dry any suggestions? I cooked as directed and pulled it at 47 mins because that's when my toothpick came out clean.
