Ingredient Notes
- Potatoes: I use a mixture of Yukon gold and Red potatoes but Russet potatoes also work.
- Olive oil: melted butter can be used instead.
- Ranch: You want to use the ranch seasoning in the package.
- Cheese: I use pepper jack and cheddar, but you can use whatever you prefer.
- Bacon: I like to use thick-cut smokey bacon.
How to make these cheesy bacon ranch potatoes
- Step 1: In a large bowl add the potatoes, onions, peppers, garlic, ranch, and olive oil and toss until combined.
- Step 2: Place equal portions of potatoes onto a pieces of aluminum foil.
- Step 3: Fold the sides of the foil sheets up and then the ends.
- Step 4: Place the foil packets on a baking sheet if you are baking or straight on the grill with medium heat.
- Step 5: Open the foil packets and add in the shredded cheese and bacon on top of the potatoes place back in the oven or grill and melt the cheese.
- Step 6: Remove from the oven or grill and top with sour cream and fresh parsley.
Recipe tips
- I use Yukon gold creamer potatoes, but Russet or red-skinned potatoes will also work.
- Cutting the potatoes the same size will ensure even cooking.
- We prefer a mixture of pepper jack and cheddar cheese. You can use whatever cheese you prefer.
- Spraying the foil with cooking spray helps prevent any sticking.

Bacon Ranch Foil Wrapped Potatoes
Ingredients
- 1 1/2 lbs small yukon gold potatoes quartered
- 3 cloves garlic minced
- 2 Jalapenos seeded and cut into slices
- 1/2 cup onion diced
- 1/2 cup red peppers diced
- 2 tablespoons ranch dip mix
- 1 tablespoon olive oil
- 5-6 slices cooked bacon coarsely chopped
- 1 1/2 cups shredded cheese
- salt and pepper to taste
- Fresh parsley
- Sour cream optional
Instructions
- In a large bowl add potatoes, olive oil, onions, pepper, garlic, jalapenos and sprinkle the ranch dip mix and toss until combined.
- Spray non-stick spray on foil sheets (I usually do 3) divide the potatoes evenly among the foil sheets. Fold the edges of the foil over the potatoes to form a packet.
- Place packs on grill over medium heat. Cover and cook 15 minutes, rotate, and cook another 15 minutes or until fork-tender.
- Gently open packs and sprinkle cheese and bacon over potatoes. Cover the grill and wait 2-3 minutes until the cheese has melted.
- Remove from grill and garnish with sour cream and fresh chopped parsley.

Olive oil goes in with the potatoes and tossed in the bowl. Yes you can use canola oil if you like. Hope you enjoy them 🙂
