Why this Recipe Works
This is the perfect no bake dessert to make during strawberry season. Not only are they so delicious, but they're so much easier to make than the chocolate dipped ones. No need to work with melted chocolate or worry about it seizing up before your treats are done.
This no bake treat is a crowd favorite that's fancy enough for special occasions and holidays, but simple enough to make for a busy weeknight easy dessert.
Simple Ingredients

- Strawberries: you can use large juicy strawberries, or medium-sized ones. Not frozen.
- Cream cheese: full-fat fat softened to room temperature first
- Heavy cream: I dont recommend milk here.
- Confectioners sugar: also called powdered sugar
- Vanilla extract: Adds a little extra sweetness.
- Chocolate: chocolate shavings or mini chocolate chips
- Crushed graham crackers: You can add a little crushed graham crackers on top if you want.
How to make Cheesecake Stuffed Strawberries

- Step 1: Use a small pairing knife to cut the green part off of each strawberry.ย
- Step 2: Use a small melon baller scoop, a strawberry huller, a measuring spoon, or use your pairing knife again to scoop out the center of the strawberries. Once the fresh berries are hulled out, place them on the cutting board.ย
- Step 3: Cut off the end tip of each strawberry so they can stand up straight on their own.
- Step 4: Repeat this process with each of the berries until they're all standing independently.

- Step 5: In a large mixing bowl, add the softened cream cheese and mix with a hand mixer until smooth and creamy.ย
- Step 6: Pour in heavy cream, sugar and vanilla extract. Mix with mixer until combined.
- Step 7: Transfer creamy cheesecake filling to a piping bag with a star tip and carefully fill the berries.ย
- Step 8: Sprinkle with graham cracker crumbs and chocolate shavings before serving.

Recipe Tips
- These are a fun treat to serve at Valentine's Day, at bridal showers, baby showers, date nights, Mother's Day brunch, or as a different birthday dessert.
- If you don't have a piping bag or pastry bag, you can put the creamy filling mixture in a ziploc bag and snip off the corner to create your own.
- I also recommend patting your strawberries dry before filling them, especially if you have extra juicy strawberries as the extra juice from the berries could make the filling runny.
- If your cream cheese is too soft, the filling can become runny very easily.

Recipe Faq's
To save time I like to hollow out the strawberries and make the filling the day before then just assemble them right before serving.
Typically this happens if your ingredients are too warm when you make the filling. If this happens, place the filling in the fridge to firm up before filling the strawberries.

Ingredients
- 12 large strawberries or 20 medium
- 1-8 oz pkg cream cheese at room temperature
- 1/3 cup heavy cream
- 1/2 cup confectioners sugar
- 1/2 teaspoon vanilla
- chocolate shavings or mini chocolate chips
- Crushed graham crackers
Instructions
- Cut the leaves off the top of the strawberry, slice a little piece off the bottom. (so it will sit on its own)
- Using a melon baller scoop or measuring spoon, scoop out the center of the strawberries and set on a platter
- In a large mixing bowl add the softened cream cheese and using a hand mixer mix until creamy. Add in the heavy cream and mix. Add in the sugar and vanilla and mix until combined
- Using a piping bag, freezer baggie or just a spoon fill the strawberries
- Sprinkle with shaved chocolate and crushed graham crackers.
