Simple Ingredients
- Ground beef: could swap out for ground chicken, ground turkey or ground pork
- Taco seasoning: packet or you can make your own taco seasoning
- Flour tortillas: smaller taco sized tortillas. You could make these with corn tortillas but the pizza may be less stable
- Refried beans: heat in a small pan over medium heat before ready to assemble pizzas
- Taco sauce:
- Cheese: shredded cheddar cheese and shredded pepper-jack cheese. Could also use Monterey Jack or a seasoned Mexican cheese blend.
- Toppings: Sliced black olives, diced tomatoes and sliced green onions.
- Oil: Vegetable, olive oil, and avocado oil all will work to fry your tortillas in.
How to make Taco Bell's Mexican Pizza
- Step 1: In a large cast iron skillet, break up the ground beef with a rubber spatula or spoon.
- Step 2: Cook the ground beef and drain off excess grease.
- Step 3: Add taco seasoning, and water, and let simmer.
- Step 4: Add taco sauce and bring to a boil to cook before removing from the heat.
- Step 5: In a separate large skillet or pan, heat oil and fry each tortilla until golden brown.
- Step 6: Flip tortilla and fry other side until lightly brown with a crispy exterior. Once finished, set on paper towels to remove excess oil.
- Step 7: Line a baking sheet with parchment paper and place crispy tortillas on it. Spread a layer of refried beans on each tortilla.
- Step 8: Carefully place some of the meat mixture on top of the beans.
- Step 9: Top with another crispy tortilla.
- Step 10: Follow that up with some enchilada sauce, sprinkle on someย shredded cheese, and top with some tomatoes and sliced olives, before baking.

- Baking the Copycat Taco Bell Mexican Pizzas helps melt the cheese and makes all the flavors meld together.
- Store leftover taco meat in an airtight container separate from the rest of the toppings in the fridge for up to 4 days. Tortillas should be stored in a ziptop bag with excess air removed, kept at room temperature for a few days.
- Reheat leftovers in the oven, Air Fryer, or toaster oven. The microwave may change the texture but can be used if needed.

Mexican Pizza
Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1/4 cup water
- 1/2 cup taco sauce
- 12 6-inch flour tortillas
- 1/2 cup oil vegetable, olive oil, avocado oil
- 1- 16 ounce can refried beans
- 1 1/2 cups enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 large tomato diced
- 1- 6 ounce can black olives sliced
- 3-4 green onions sliced
- Sour cream optional
Instructions
- Heat a large skillet on medium high heat and add the ground beef, cook until browned. Drain the grease. Add taco seasoning, water and simmer then add 1/2 cup taco sauce. Bring mixture to a boil, then reduce heat to medium-low. Stir and simmer for 10 minutes. Remove from heat.
- Preheat oven to 400 degrees F.
- In a large skillet heat the oil up on medium heat.
- Fry each tortilla in the oil just until lightly browned and crispy, they may bubble up while frying you can gently pop the bubbles with a fork. Remove and set aside on paper towels to drain.
- In a small pan on medium heat warm the refried beans.
- Place a single layer of the beans on the crispy tortillas, followed by a layer of the taco meat, Top with another tortilla. Spread 3-4 tablespoons of enchilada sauce, sprinkle some cheddar and jack cheese and top with a few tomatoes and olives.
- Bake in the oven for 10-12 minutes or until cheese is melted and bubbly.
- Remove from the oven and top with green onions and cut into slices. Serve with sour cream!
