- Canned green beans: thawed frozen green beans could also be used. You can use fresh green beans too, trimming the ends first.
- Onion: White or yellow.
- Herbs and seasonings- minced garlic cloves, Italian seasoning, salt, black pepper, red pepper flakes and fresh parsley
- Olive oil
How to make sausage green bean potatoes
- Step 1: Prep ingredients by slicing sausage, washing and dicing the potatoes, and roughly chopping the onions. Combine the sausage, potatoes, green beans, onion, garlic, olive oil, and seasonings. Stir to coat everything.
- Step 2: Dump the mixture in a prepared 9x13-inch baking dish that's been sprayed with cooking spray. Bake in the oven and garnish with parsley, if using, before serving.

Sausage, Green Bean, Potato Bake
Ingredients
- 1 1/2 13.5-14 oz fully cooked smoked sausage
- 1 pound baby creamer potatoes I use a mixture of red and white
- 2- 15 oz cans green beans drained
- ยฝ onion roughly chopped
- 6 garlic cloves minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 1/2 teaspoons salt more to taste
- 1 teaspoon black pepper
- ยฝ teaspoon red pepper flakes
- Fresh chopped parsley
Instructions
- Preheat oven to 425 degrees
- Slice the smoked sausage into ยผ-inch thick slices.
- Wash the baby potatoes and slice in half. (If they are extra-large you may need to cut them into quarters.)
- In a bowl add the sausage, potatoes, green beans, onions, garlic, olive oil, Italian seasoning, salt, pepper, and red pepper flakes and toss until coated.
- Spray a 9x13 baking dish with non-stick cooking spray. Pour contents into the baking dish. Place on the center rack and bake for 40-45 minutes or until potatoes are tender, stirring halfway through.
- Remove from oven and add more salt and pepper if desired.
- Garnish with fresh chopped parsley!

I made this using fresh green beans, country sausages with casing removed, 1/2 a Vidalia onion, and a can of whole potatoes. Seasoned with salt, pepper, and Adobo. Cooked @ 425 for 40 minutes. Was very good!

This was amazing. My son said he wasn't expecting to like, but he loved it. I did boil my boil my baby red potatoes for 5 minutes because they have been too hard in all my other sheet dinners. I added a teaspoon of sugar because I always add it to my green beans.
