The best part of this crockpot recipe is that you need very little prep to make it. This has to be one of my favorite slow-cooker meals!

Bring to a soft boil, and reduce the heat and allow to simmer for at least 1 hour. Be sure to stir it a few times while it's cooking.

Slow Cooker Sausage Bean Soup
Ingredients
- 1 medium onion dice
- 2 carrots peeled and diced
- 2 celery stalks diced
- 1 red bell pepper diced
- 2 tablespoons olive oil
- 12 ounces smoked sausage diced
- 1 15 oz can Great Northern beans, drained and rinsed
- 1 15 oz can cannellini beans, drained and rinsed
- 1 15 oz can small red kidney beans drained and rinsed
- 4 cups chicken stock
- 1 15 ounce can diced tomatoes, do not drain
- 1 tablespoon fresh chopped basil or 1 teaspoon dried basil
- 1 tablespoons minced garlic
- 1 teaspoon Italian seasoning
- 2 bay leaves
- 1 teaspoon paprika
- 2 teaspoon fresh thyme or ยฝ teaspoon dried
- 1 teaspoon salt
- ยฝ teaspoon ground pepper
- 1 tablespoon fresh parsley minced
Instructions
- Place all the ingredients except the parsley into the slow cooker.

This is a great soup. I followed the recipe. However, I didnโt have a red pepper. I used a green pepper, and diced some sweet potatoes to add the sweetness that red pepper usually adds. This soup is wonderful on a chilly day. It has a nice, earthy flavor.

My nutritional values are all automated, so I have no idea why it said 1 gram. This soup serves 6 approximately 1 1/2-2 cups per serving.

Cannelli beans are just larger white beans. You can use whatever beans you want ๐

Hi there, quick question..I thought cannellini beans and great northern beans were the same? If they are, or are similar, can you use 2 cans of cannellini beans instead? Or do the great northern beans have a different taste or texture?
