Honey Roasted Potatoes are new potatoes tossed in melted butter, honey, garlic and a little dry mustard, then roasted until the edges crisp and the honey caramelizes. Same idea as my Honey Garlic Roasted Carrots, and they go in the oven together.

They go with about anything. On a weeknight, I put them next to a Slow Cooker Rotisserie Chicken or Brined Herb Chicken Breasts, and at the holidays they hold up fine next to the ham. New potatoes are the right size to roast through from raw, so there’s no boiling first — cut, toss, and into the oven.

Ingredients Needed

All the ingredients needed for this recipe.
  • Potatoes: I use white New potatoes but baby potatoes or even Yukon Gold potatoes will also work.
  • Onions: I use a white onion but sweet onions are also fine.
  • Garlic: Fresh garlic cloves are the best, but you can use garlic powder if needed.
  • Fresh Parsley: This adds color and brightness to the finished dish.
  • Dry Mustard: Mustard and honey blend so well together.

How To Make Honey Roasted Potatoes

Sauce mixed in a bowl and tossed with potatoes.

Step 1:In a small bowl, combine the melted butter, honey, mustard, and red pepper and mix until combined.

Step 2: Pour mixture over potatoes and toss until combined.

Step 3: Place potatoes into a single layer in a large oven-safe skillet or rimmed baking sheet. Roast at 375 for 45 to 50 minutes, turning every 15 so nothing burns, until the potatoes are tender and the edges are browned. Finish with parsley.

Recipe Tips

  • I use white new potatoes. Baby potatoes or Yukon Golds work too — same as in my Slow Cooker Baby Potatoes.
  • Depending on how large your potatoes are, slice them either in half or quarters. Just make sure the potatoes are close to the same size.
  • I used a 12-inch cast-iron skillet, but you can use a baking sheet or baking dish.
  • Make sure your potatoes are one layer, to get the desired caramelization on each potato.
  • Fresh chopped parsley gives it such a pretty finish.
  • Don't crowd the pan. Potatoes that touch steam instead of roast — use two pans before you stack.

Recipe FAQ's

Do I need to boil the potatoes first?

No. New potatoes are small enough to roast through from raw in 45 to 50 minutes. Boiling first makes them mushy under the honey.

Why did my potatoes burn?

Honey burns before potatoes cook. Keep the oven at 375, not higher, and turn them every 15 minutes. If your oven runs hot, pull them at 40 minutes and check.

Can I make these ahead?

Roast them up to a day ahead, cool, and refrigerate. Reheat spread out on a sheet pan at 400 for 10 minutes so they crisp back up — the microwave makes them soft.

What can I serve with these honey roasted potatoes?

Anything roasted or grilled. Chicken, pork chops, ham at the holidays, steak. They're sweet, so they're best next to something savory.

Can I use a different potato?

Yes — red potatoes, Yukon Golds, or fingerlings. Cut everything to about the same size so it cooks evenly. Russets work but go fluffy rather than creamy.

  1. The recipe cards are always at the bottom of the post. You went right past the full recipe to write this comment. You can use the Jump to Recipe button at the top of the post to zoom you right down. Hope this helps Lee 🙂

  2. Hi Wendy, What temp due you set the oven and for how long do you cook the potatoes.
    Thanks,
    Lee

  3. Make sure you place the potatoes on the center oven rack. Mix the potatoes well so the honey is well distributed. Maybe your oven bakes really hot, you could bring down the temp to 400 and just make sure to keep an eye on them and give them a stir if you see them burning.

  4. I doubled the recipe last night and baked it on a baking sheet and the potatoes got a bit charred. I also did not have dry mustard and substituted dijon instead. What should I have done to prevent the potatoes from burning rather than getting caramelized. TIA
