  • 1-1/2 pounds of boneless skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons butter
  • 4 garlic cloves minced
  • 3-4 tablespoons Honey
  • 1- 1/2 tablespoons apple cider vinegar
  • Fresh chopped parsley or green onions for garnish

Instructions
 

  • Cut chicken thighs into small bite sized pieces.
  • Heat olive oil and 1 tablespoon butter in a large skillet (cast iron works best) on high heat.
  • Add the chicken to the skillet, sprinkle with salt and pepper. Let cook until it starts to change from pink to white and get some golden edges about 4-5 minutes.
  • Add the remaining butter, garlic, vinegar and honey. Stir until chicken is coated.
  • Simmer sauce and chicken to caramelize the outside about another 2-3 minutes.
  • Top with fresh chopped parsley or green onions. Serve chicken over rice or mashed potatoes.

This dish comes together fast so you need to have everything chopped, measured, and ready to go.
If you use chicken breasts instead of thighs just make sure you adjust the cooking time as chicken breasts will dry out if cooked too long.
To get the best color you need to have a super hot pan, a cast-iron pan does just that. A stainless steel pan will also work.

  3. Delicious!! I tossed the chicken breast bites in seasoned flour to help with the color, keep them juicy, and grab the sauce. SO easy and definitely on the rotation. Served over rice with some extra sauce. It's always nice to find such a great dinner winner 🙂

  5. I always read comments before trying anything. So I took the breast comments to heart. I cut my breasts the night before and folded them in paper towels. Pulled out a tad of the water. I had small little breasts (just 2) from Omaha Steak that my Dad mailed me. I can't get out to find meat. So I halved the sauce and it caramelized beautifully. Though I wanted sauce... So I put my rice in my instant pot to cook, made chicken & set aside, and put butter in pan with my veggies and stir fried them with other half of sauce. Rice takes 15 minutes total and it was done right when veggies were ready with a lovely sauce and chicken was still nice and warm. Excellent meal for a few days! Total keeper!

  7. I can't say for sure this was the issue but sometimes the meat manufacturers will pump extra water into chicken breasts. Which will cause excess liquid while cooking. Make sure your pan is extra hot and use a large pan so it's not overcrowd or it will just steam and not brown.
