Honey Garlic Roasted Carrots are cut into big pieces, tossed in melted butter, honey and garlic, and roasted in the same skillet until the edges caramelize and the middles go tender. Seven ingredients, one pan, and about ten minutes of work before the oven takes over. They're the side I put next to Crock Pot Turkey and Stuffing when the oven is already full.

Whole carrots, not baby carrots — they have more flavor and hold up to the heat. This is a holiday-table side that also works on a Tuesday. For the rest of the plate, try Slow Cooker Honey Glazed Ham and Garlic Roasted Mashed Potatoes.

Ingredients Needed

All the ingredients needed for these honey carrots.
  • Carrots: Large carrots peeled and cut into 2-3 inch pieces.
  • Butter: Use salted or unsalted butter.
  • Honey: Gives the carrots their extra added sweetness and allows them to caramelize into a delicious glaze.
  • Garlic: Fresh minced garlic always adds the most flavor.
  • Parsley: Fresh chopped parsley looks the best but dried parsley can be used in a pinch.

How to Make Honey Garlic Roasted Carrots

Melted butter, garlic and honey in a skillet then carrots added in.
  • Step 1: Melt butter In a large oven-safe skillet and whisk in the fresh garlic and honey.
  • Step 2: Toss carrots with the honey-garlic glaze mixture until coated. Bake until fork-tender.

Recipe Tips

  • Cut them the same size. Even pieces roast evenly. Halve the thick ones.
  • Skip the baby carrots. They don't have the flavor of whole carrots and they overcook.
  • Use a cast iron skillet and put it straight in the oven. No oven-safe skillet? Transfer to a baking dish.
  • Watch the last five minutes. Honey burns. Pull them when the edges are dark and sticky, not black.
  • Roast these alongside my Honey Garlic Roasted Potatoes — same oven, same temp.

Recipe FAQ's

Do you put the honey on before or after roasting?

Before. The honey goes in the butter with the garlic, the carrots get tossed in it, and it caramelizes in the oven. That's the glaze.

Can I Prepare These Ahead Of Time?

Yes, making these honey garlic roasted carrots ahead of time is a huge time saver. You can reheat them in the microwave or a 300-degree oven for 15 minutes.

Do I need to peel the Carrots?

I peel my carrots, but it's just personal preference; you certainly don't have to just give them a good scrub.

Can I Use Frozen Carrots?

Yes, you can just allow them to thaw first to reduce the extra water. Frozen carrots are blanched so they are a bit softer than regular carrots and may need less time to roast.

How Long to Roast Carrots?

Roasted honey carrots only take about 25 minutes to roast, but it certainly depends on how large you have cut your carrots. I recommend if they are really thick, cut them in half.

What if I Don't Have an oven-safe skillet?

No problem, just melt the butter, garlic, and honey in a skillet, place the sliced fresh carrots into a single layer in a baking dish or baking sheet, and pour the honey glaze over the top, and toss until coated. Bake according to the directions.

  3. Made these to go with roast beef and OMG the best roasted carrots! They turned out perfect and I love that they can just roast in the cast iron!

  4. This is so delicious! I will add a little more honey next time because I like mine a little sweeter. I did add some Parmesan Italian seasoning and some cajun seasoning to help amp up the flavor because I honestly add those to almost everything. I may try a little dusting of Parmesan for kicks sometime.
